Falafel Burger with Grilled Halloumi

  • 2 x 400g tins chickpeas, drained
  • 2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 garlic cloves
  • Small bunch spring onions or one small red onion
  • 1 teaspoon salt
  • 2 tablespoon plain flour
  • Olive or vegetable oil, for frying
  • Yamas! Halloumi Burger Slices
  • Burger rolls or baps
  • Rocket leaves, to serve
  • Pesto, to serve
  • Hummus, to serve on side


1. To make the falafel burgers, put the first eight ingredients in a food processor and mix until a smooth consistency is achieved. Form into six burgers. If they are too runny, add a little more flour.

2. Cover the bottom of a frying pan with about 1mm of olive or vegetable oil to and heat over a medium high ring. When hot, add the falafel and cook until golden (approximately 3 minutes each side).

3. Split the Halloumi Burger Slices into 4, place each cheese slice on a hot grill pan for approximately 1 minute each side until golden brown, and place on top of burger along with the rocket and a little pesto.

4. Serve the hummus on the side.
