Flaming Saganaki

  • One 150g pack of Yamas! Saganaki
  • Pepper
  • 100 ml brandy
  • 125g white flour
  • 4 tablespoons butter
  • 2 lemons, juiced
  • 6 pitta breads, toasted
  • Salad, to serve (optional)


1. Pour the brandy into a shallow dish and place the cheese on top. Turn over so that both sides are covered with brandy.

2. Put the flour on a plate and removing the Saganaki from the dish, covering both sides with the flour.

3. Melt the butter over a medium heat and fry the cheese for 2-3 minutes or until golden brown on each side. The cheese will form a textured layer on the top and bottom but will remain soft in the centre.
