Lamb and Grilled Halloumi Burger

  • 500g minced lamb
  • 4 Yamas! Halloumi Cheese Slices (1 packet)
  • 2 garlic cloves, crushed
  • 1 small red onion, finely chopped
  • 1 teaspoon coriander seeds, crushed or ground coriander
  • 1 teaspoon cumin seeds crushed or ground cumin
  • Sea salt and freshly ground black pepper
  • 4 tablespoons olive oil
  • 4 burger buns, to serve
  • 1 large courgette, sliced lengthways
  • Hummus


1. Place the minced lamb in a large mixing bowl and add the garlic, onion, coriander and cumin. Season well with salt and pepper and mix all the ingredients using your hand until combined.

2. Divide into 4 portions and shape into burgers. Place the burgers on a tray and cover with cling-film and place into the fridge for around 30 minutes.

3. If you are using a grill pan or barbeque, heat it to smoking, brush with a little olive oil and cook your burgers to taste (approximately three minutes each side for rare, seven minutes each side for well done). If using a frying pan, add a little olive oil and cook to taste.

4. Grill or fry the Yamas! Halloumi Burger Slices on both sides until slightly brown.

5. Grill or fry the sliced courgette, two minutes on each side, until slightly brown.

6. Assemble the burgers by placing a tablespoon of hummus on the bottom bun, then place the lamb and Yamas! Halloumi Burger Slices on top. Cover with the other half of the bun.
